Edible Journal from Iceland Trip

Mike is excited to share the stories of his Iceland trip through his food. He is inspired by techniques and philosophy he has learned from working under chef Gunnar Karl Gíslason at Dill restaurant in Reykjavik.

Visual Journal "Casting"

I cast energy by directly pressing onto paper, and I use what's on the paper guide me. I like having this simple conversation. These mono-prints are my journal of my thoughts, dreams, wishes, and whatever else unexplainable.

Chef Gunner Karl Gíslason was kind enough to send Mike home with two handprints of his. I think hands can tell stories. I love looking at different people's hands. I am very honored to have had the chance to work with chef's hand.
